By chopping and tossing all the ingredeints together, all of the flavors of the salad come together in unique and delicious ways! The tangy artichoke can truly mingle with the spicy pepperoncini, succulent salami and pepperoni, and the creamy, cheesy bocconcini and provolone. Dressed in a vibrant vinaigrette, Fresh Italian Chopped Salad really does have the cool, refreshing flavor that makes summer fun, and then some!

Ingredients

  • 1 head romaine lettuce, chopped
  • 1/2 small head radicchio, chopped
  • 1/2 cup jarred pepperoncini, finely chopped, plus 3 tablespoons pepperoncini brine
  • 1/2 cup roasted red peppers, finely chopped
  • 1 (16-ounce) block mozzarella, cut into bite-sized pieces, can substitute bocconcini, halved or quartered
  • 1 1/2 cups marinated artichoke hearts, drained
  • 1 (8-ounce) package provolone cheese, cut into 1/2-inch cubes
  • 1 (8-ounce) package deli-sliced salami, cut into 1/2-inch pieces
  • 4 ounces sliced pepperoni, quartered
  • 1 1/4 teaspoons kosher salt, divided
  • black pepper, to taste
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

Directions

Step 1 -In a bowl, add the romaine, the radicchio, the pepperoncini, the roasted red peppers, the mozzarella, the artichokes, the provolone, the salami, the pepperoni, 1 teaspoon of the salt, and the black pepper and toss lightly to combine.

Step 2 -In a medium bowl, add the vinegar, the pepperoncini brine, the remaining salt, and the black pepper and whisk to combine.

Step 3 -While whisking constantly, slowly drizzle the olive oil into the vinegar mixture until the dressing is combined and emulsified.

Step 4 -Add the dressing to the salad and toss lightly to combine.

Step 5 -Serve.
