Ingredients

  • 3/4 cup plain yogurt
  • 1/3 cup plus 1 tablespoon vegetable oil
  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • salt, to taste

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 9-inch springform cake pan.

Step 3 -In a large bowl, add the yogurt, the vegetable oil, the eggs, the granulated sugar, and the vanilla extract and using an electric hand mixer on medium speed, beat well until thoroughly combined.

Step 4 -Add the flour, the baking powder, and the salt to the batter mixture and stir until just combined.

Step 5 -Evenly pour the batter into the prepared cake pan and spread it out evenly.

Step 6 -Bake until a toothpick inserted into the center of the cake comes out clean, about 25-30 minutes.

Step 7 -Serve.
