Ingredients

  • 12 ounces fettuccine
  • 4 slices bacon, chopped
  • 1 pound chicken tenders, cut into 1-inch pieces
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 4 plum tomatoes, chopped
  • 1 cup heavy cream
  • 5 ounces baby spinach
  • 3/4 cup parmesan cheese, grated
  • 3 tablespoons fresh basil, chopped, for garnish

Directions

Step 1 -In a large pot of salted, boiling water, cook the fettuccine to al dente, according to the package directions.

Step 2 -Drain the pasta.

Step 3 -In a large, cold skillet, add the bacon.

Step 4 -Place the skillet over medium-high heat and cook the bacon, while stirring occasionally, until crispy, about 8 minutes.

Step 5 -Using a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain.

Step 6 -Season the chicken with the salt and the pepper.

Step 7 -In the same skillet over medium-high heat, add the chicken pieces to the bacon drippings and cook undisturbed until golden brown on one side, about 2-3 minutes.

Step 8 -Cook the chicken pieces, while stirring occasionally, until they reach an internal temperature of 165 degrees F, about 4 minutes.

Step 9 -Transfer the chicken pieces to the plate with the bacon.

Step 10 -Reduce the heat to medium.

Step 11 -Add the garlic and cook, while stirring, until fragrant, about 30 seconds.

Step 12 -Add the tomatoes and the heavy cream to the skillet and bring to a simmer.

Step 13 -Add the spinach and cook, while stirring, until just wilted, about 2 minutes.

Step 14 -Add the bacon, the chicken pieces, the fettuccine, and the parmesan and toss with tongs until everything is well-coated

Step 15 -Season the pasta mixture with the salt and the pepper.

Step 16 -Garnish with the basil and serve.
