Easy Chicken and Potato Skillet is a fast and easy dinner for two that is guaranteed to make you smile! The chicken is seasoned with smoky-sweet paprika and the potatoes are saturated with herbaceous garlic butter, which tastes even better than it sounds. For the best results, perhaps a little candlelight will make the Easy Chicken and Potato Skillet feel that much more special!
Ingredients
- For the chicken:
- 1 pound chicken breast, skinless and boneless
- 1 teaspoon smoked paprika
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 2 tablespoons olive oil, divided
- For the potatoes:
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter, melted and divided
- 8 cloves garlic, peeled
- 12 ounces potatoes, cut into wedges
- 1/4 teaspoon salt
- Italian seasoning, to taste
- 1 teaspoon fresh rosemary, optional, roughly chopped
- 1 tablespoon olive oil
Directions
Step 1 -In a large resealable bag or in a large bowl, add the chicken, smoked paprika, Italian seasoning, salt, and 1 tablespoon of the olive oil.
Step 2 -Mix well, massaging so the chicken becomes well-coated, and set aside to let marinate.
Step 3 -Over medium-low heat, heat a cast-iron skillet.
Step 4 -Add 1 tablespoon of the olive oil and butter to the hot skillet.
Step 5 -Add the garlic, potatoes, and rosemary to the skillet and cook until the outside of the potatoes are golden brown and the insides are cooked through, about 10-15 minutes.
Step 6 -Transfer the potatoes from the skillet and set aside.
Step 7 -In the same skillet on medium heat, add the remaining 1 tablespoon of olive oil.
Step 8 -Cook the chicken on each side until cooked through (reading 165 degrees F in the center with a meat thermometer), about 4-5 minutes.
Step 9 -Move the chicken to one side of the skillet and add back the potatoes to the other side.
Step 10 -Season with salt to taste.
Step 11 -After the potatoes are fully heated, remove from heat and serve immediately.
