Ingredients

  • 6 pecan shortbread cookies, finely crushed
  • 2 tablespoons butter, melted
  • 2 tablespoons plus 1/2 cup white sugar, divided
  • 12 ounces fresh strawberries
  • 1 (8-ounce) package cream cheese, softened
  • 2 tablespoons fresh lemon juice
  • 1/2 cup heavy cream, whipped

Directions

Step 1 -In a bowl, add the cookie crumbs, the butter, and 2 tablespoons of the white sugar and whisk to combine.

Step 2 -Divide the cookie crumb mixture evenly among six (1/2-pint) canning jars with lids and gently press it into the bottoms.

Step 3 -Halve 6 of the strawberries for garnish and set them aside.

Step 4 -Chop the remaining strawberries.

Step 5 -In a bowl, add the cream cheese, the remaining white sugar, and the lemon juice and using an electric hand mixer on medium speed, beat until smooth.

Step 6 -Add the whipped cream and the chopped strawberries and fold to combine.

Step 7 -Divide the cream cheese mixture evenly among the jars on top of the cookie crumb mixture.

Step 8 -Top each of the cheesecake mixtures with 2 of the reserved strawberry halves.

Step 9 -Cover the jars with the lids and chill them for at least 2 hours and up to 3 days.

Step 10 -Serve cold.
