Ingredients

  • For the cake:
  • 1 (15.25-ounce) box lemon cake
  • 1 (12-ounce) can Mountain Dew®
  • 4 eggs
  • 3/4 cup vegetable oil
  • For the glaze:
  • 3 cups confectioners' sugar
  • 1/4 cup plus 1 tablespoon Mountain Dew

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a fluted pan with nonstick cooking spray that contains flour.

Step 3 -In a large bowl, add the cake mix, 1 can of the Mountain Dew, the eggs, and the vegetable oil, use an electric hand mixer beat on high speed, about 30 seconds.

Step 4 -Increase the mixer's speed to medium and beat the batter mixture, about 2 minutes.

Step 5 -Evenly pour the cake batter into the prepared fluted pan and bake until it is set and a toothpick inserted into the center comes out clean, about 45 minutes.

Step 6 -Transfer the cake to a wire rack and let it cool in the pan, about 10 minutes.

Step 7 -Invert the cake onto the wire rack to cool completely.

Step 8 -When the cake is completely cool, in a large bowl, add the confectioners' sugar and the remaining Mountain Dew and use an electric hand mixer to beat until it is smooth and there are no lumps.

Step 9 -Place a piece of wax paper that is the size of the wire rack underneath the rack.

Step 10 -Evenly pour the glaze over the cake, coating the top and the sides.

Step 11 -Let the cake sit until the glaze has set.

Step 12 -Slice and serve.
