Ingredients

  • 1 pound ground beef
  • 1 medium white onion, chopped
  • 2 (15-ounce) cans Ranch Style® beans
  • 1 (9.3-ounce) package corn chips, divided
  • 2 (10-ounce) cans enchilada sauce
  • 2 cups cheddar cheese, shredded
  • green onions, to taste, thinly sliced, for garnish

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 9x13-inch baking dish.

Step 3 -In a large skillet over medium-high heat, add the beef and the white onion and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 4 -Reduce the heat to medium. Add the beans to the beef mixture and cook, stirring frequently, until they are heated through.

Step 5 -Reserve 1 cup of the corn chips.

Step 6 -Add the remaining corn chips to the bottom of the prepared baking dish.

Step 7 -Pour the beef mixture over the corn chip layer.

Step 8 -Pour the enchilada sauce over the beef layer and sprinkle with the cheese and the reserved 1 cup of corn chips.

Step 9 -Bake the pie until the cheese has melted, about 15-20 minutes.

Step 10 -Serve the pie garnished with the green onions.
