Classic Chicken Enchiladas are guaranteed to become a staple in your home! Tortillas wrapped around tender chicken, hearty black beans, and diced chiles are slathered in a tangy, rich enchilada sauce. Ingredients
- 2 tablespoons olive oil
- 1 small white onion, diced
- 1 1/2 pounds chicken breasts, boneless and skinless, diced into 1/2-inch pieces
- 1 (4-ounce) can diced green chiles, optional
- sea salt, to taste
- black pepper, to taste
- 1 (15-ounce) can black beans, rinsed and drained
- 8 large flour or corn tortillas
- 1 (28-ounce) can enchilada sauce
- 3 cups Mexican blend cheese, shredded
- Optional toppings:
- fresh cilantro, to taste, chopped
- red onions, to taste, chopped
- avocado, to taste, diced
- jalapeños, to taste, chopped
- sour cream, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -Using a large skillet, heat the oil over medium-high heat.
Step 4 -Add in the onions and sauté until it is soft, about 3 minutes.
Step 5 -Add the chicken pieces and the green chiles.
Step 6 -Season the chicken mixture generously with the salt and the pepper.
Step 7 -Continue cooking the chicken mixture until the chicken pieces are completely cooked through at 165 degrees F, about 6-8 minutes.
Step 8 -Add the beans to the chicken mixture.
Step 9 -Remove the pan from the heat, cover, and set it aside.
Step 10 -On a clean surface, lay out 1 of the tortillas.
Step 11 -Spread 2 tablespoons of the enchilada sauce evenly on the tortilla.
Step 12 -Add a large scoop of the chicken mixture to the tortilla.
Step 13 -Add 1/3 cup of the cheese.
Step 14 -Roll up the tortilla and place it in the prepared baking dish, seam-side down.
Step 15 -Repeat the filling and rolling process using the remaining ingredients. Use an additional baking dish if needed.
Step 16 -Cover the enchiladas with the remaining sauce and the remaining cheese.
Step 17 -Bake the dish uncovered until the enchiladas are cooked through and the cheese is bubbly, about 25-35 minutes.
Step 18 -Serve with your favorite toppings!
