We love a good blend of meat and veggies on a stick. There's something just so fun about that experience! Well, this Chicken Souvlaki is no exception. The juicy chicken is seasoned so deliciously and brings a bit of that Mediterranean flare we love so much. Mmm, and those crispy, fresh onions add the extra pizzaz it was missing. It's just a blast to scooch them off the skewer and chow them down! They're amazing on their own, but could be oh, so good pulled onto a salad, a veggie bowl, or anything else you're craving! Ingredients
- 1/3 cup olive oil
- 3 tablespoons fresh lemon juice
- 3 cloves garlic, crushed
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 chicken breasts, cut into 1-inch cubes
- 1/2 onion, cut into 1-inch pieces
- parsley leaves, to taste, for garnish
- lemon slices, to taste, for garnish
Directions
Step 1 -In a medium bowl, add the olive oil, the lemon juice, the garlic, the oregano, the salt, and the pepper and stir to combine.
Step 2 -Add the chicken cubes and the onion slices to the marinade and toss well to coat.
Step 3 -Let the chicken-onion mixture marinate in the refrigerator for at least 30 minutes and up to overnight.
Step 4 -Preheat the grill to medium-high heat.
Step 5 -Transfer the chicken cubes and the onion slices from the marinade, allowing the excess to drip off, and thread them, alternating, onto soaked wooden skewers.
Step 6 -Discard the marinade.
Step 7 -Add the skewers to the grill and cook, turning frequently, until the chicken reaches an internal temperature of 165 degrees F, about 10-15 minutes.
Step 8 -Serve the chicken souvlaki garnished with the parsley and the lemon slices.
