Bud's Beer Cheese is the kind of appetizer that everyone loves instantly... so much so it can be hard to get enough of it! Cheesy, rich, tangy, melty, and with succulent bites of bacon mixed right on and piled on top! You'll need plenty of pretzel bites or bread cubes to soak up all of Bud's Beer Cheese! And save some for us!
Ingredients
- For the beer cheese:
- 2 1/2 (8-ounce) packages cream cheese
- 1/4 cup sour cream
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- 1 cup beer, amber or lager
- 3 cups cheddar cheese, shredded
- 1/2 cup bacon, cooked and chopped
- 1/4 cup heavy cream
- Optional, for serving:
- 2 green onions, chopped
- 1 cup bacon, cooked and chopped
- soft pretzel bites, to taste
Directions
Step 1 -Coat a 3-quart slow cooker with nonstick spray.
Step 2 -Add the cream cheese, the sour cream, the mustard, the garlic powder, the beer, the cheddar, and 1/2 cup of the bacon to the slow cooker.
Step 3 -Cover and cook, while stirring occasionally, until the mixture is smooth and heated through, about 3-4 hours on low. About 30 minutes before serving, add the heavy cream to the cheese mixture and stir to combine.
Step 4 -Top the cheese mixture with the green onions and the remaining bacon.
Step 5 -Serve with the pretzel bites.
