Ingredients

  • 1 tablespoon oil
  • 4 cups green cabbage, chopped
  • 3 large carrots, peeled and chopped
  • 2 ribs celery, finely chopped
  • 1 medium onion, finely chopped
  • 3 cups low-sodium chicken or vegetable broth
  • 1 (14-ounce) can diced tomatoes with Italian seasonings
  • 1 teaspoon salt, plus more, to taste
  • 1/4 teaspoon pepper, plus more, to taste

Directions

Step 1 -In a large soup pot over medium heat, heat the oil.

Step 2 -Add the cabbage, the carrots, the celery, and the onion and cook, while stirring often, until the onion is translucent, about 5 minutes.

Step 3 -Add the broth, the tomatoes and their juices, 1 teaspoon of the salt, and 1/4 teaspoon of the pepper and bring the mixture to a simmer.

Step 4 -Cover and reduce the heat to medium-low.

Step 5 -Simmer the mixture, while stirring occasionally, until all of the vegetables are tender, about 40 minutes-1 hour.

Step 6 -Season with the extra salt and the extra pepper as needed.

Step 7 -Serve.
