Ingredients

  • 4 tablespoons unsalted butter, softened
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar or dark brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon espresso powder, optional
  • 3/4 teaspoon table salt
  • 1 tablespoon cider vinegar
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 cups white whole-wheat flour
  • 2 2/3 cups semisweet chocolate chips

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Lightly grease two baking sheets.

Step 3 -In a large bowl, add the butter, the oil, the granulated sugar, the brown sugar, the vanilla, the espresso powder, and the table salt and beat together until combined and smooth.

Step 4 -Add the vinegar, the egg, the baking soda, and the baking powder to the butter mixture and beat to combine.

Step 5 -Add the flour to the butter mixture and stir until just combined.

Step 6 -Fold the chocolate chips into the dough. Don't worry if the dough seems oily or not cohesive, that's normal.

Step 7 -Drop the dough by the tablespoonful, about 1 inch apart, onto the prepared baking sheets.

Step 8 -Bake until the cookies are an even golden-brown, about 15-17 minutes.

Step 9 -Allow the cookies to cool on the baking sheets for 5 minutes.

Step 10 -Transfer the cookies to a wire rack to cool completely.

Step 11 -Serve.
