Egg noodles get cooked in chicken broth to ensure they are extra savory, and then it all gets topped with crispy bacon bites and sharp parmesan cheese to really load up the good stuff! Ingredients
- 6 ounces bacon, cut into 1-inch pieces
- 1 yellow onion, diced
- 2 cups chicken broth
- 8 ounces wide egg noodles
- 1/4 pound fresh spinach
- 1/3 cup parmesan cheese, grated
Directions
Step 1 -In a large skillet over medium-high heat, add the bacon pieces and cook, while stirring, until they are browned and crispy, about 5-8 minutes.
Step 2 -Using a slotted spoon, transfer the bacon to a bowl.
Step 3 -Reserve 1 tablespoon of the bacon drippings in the skillet, draining the remainder.
Step 4 -Add the diced onions to the hot bacon drippings in the skillet and cook, while stirring, until they are soft and transparent, about 3-4 minutes.
Step 5 -Add the chicken broth to the skillet and stir, while scraping the bottom of the pan to release the browned bits.
Step 6 -Add the egg noodles to the broth mixture and cover the skillet with a lid.
Step 7 -Allow the noodle mixture to come to a boil over high heat.
Step 8 -Quickly stir the noodle mixture and reduce the heat to low.
Step 9 -Allow the noodle mixture to simmer, covered and while stirring occasionally, until the noodles are al dente and the broth is mostly absorbed, about 10 minutes.
Step 10 -Add the spinach to the noodle mixture and stir until it is wilted.
Step 11 -Turn off the stovetop heat.
Step 12 -Add the cooked bacon pieces and the parmesan cheese to the noodle mixture and stir to combine.
Step 13 -Serve.
