Ingredients

  • 4 cups arugula or mixed greens
  • 2 medium ripe tomatoes, cut into 1/4-inch-thick pieces
  • 1/2 small red onion, sliced
  • 8 ounces burrata, torn into bite-size pieces
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • 1/4 cup pesto, optional
  • 1 tablespoon pine nuts or almonds, toasted
  • 2 tablespoons fresh basil leaves, thinly sliced

Directions

Step 1 -Add the arugula to a large serving bowl.

Step 2 -Evenly layer the tomatoes on top of the arugula.
