This im-peck-able, juicy chicken dish is packed with layers of Tex-Mex flavor and has a fun, crispy crunch that is brought to you by the ever beloved, cheesy Doritos®. It really is all it's cracked up to be! So, don't be a scaredy chicken... do The Crunchy Chicken and enjoy!
Ingredients
- For the chicken bake:
- 1 (9.75-ounce) bag cheesy tortilla chips, such as Doritos nacho-cheese-flavored, divided
- 2 cups sour cream
- 2 cups salsa
- 1 rotisserie chicken, shredded
- 6 flour tortillas, fajita-sized
- 1 (1-ounce) package taco seasoning
- 1 (10.5-ounce) can cream of chicken soup
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 (15.25-ounce) can corn, drained
- 1 (8-ounce) package Mexican-blend cheese, shredded
- Optional toppings:
- grape tomatoes, to taste
- dried cilantro, to taste, chopped
- jalapeños, to taste, sliced
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking dish with cooking spray.
Step 3 -Add 2 cups of the Doritos to a large plastic resealable bag, seal, and crush them into small pieces.
Step 4 -In a medium bowl, add the sour cream and the salsa and stir to combine.
Step 5 -Add 1/2 cup of the salsa mixture and the shredded rotisserie chicken to the crushed Doritos, seal the bag, and shake until the meat is evenly coated. Reserve the remaining salsa mixture.
Step 6 -Lay 2 of the tortillas into the bottom of the prepared baking dish and evenly sprinkle them with 1 tablespoon of the taco seasoning, then top with the coated chicken.
Step 7 -Add the cream of chicken soup to the reserved salsa mixture and stir to combine.
Step 8 -Spread 1/3 of the chicken soup mixture over the coated chicken layer in the baking dish and evenly top with 1/3 of the diced tomatoes with green chilies (plus their juices).
Step 9 -Evenly sprinkle 1/3 of the corn over the diced tomatoes layer and evenly sprinkle with 1/4 of the cheese.
Step 10 -Top the cheese layer with 2 of the remaining tortillas, then evenly top with 1 tablespoon of the taco seasoning, 1/2 of the remaining coated chicken, 1/2 of the remaining chicken soup mixture, 1/2 of the remaining diced tomatoes with green chilies (plus their juices), 1/2 of the remaining corn, and 1/3 of the remaining cheese.
Step 11 -Repeat the layers using the remaining tortillas, the remaining taco seasoning, the remaining coated chicken, the remaining chicken soup mixture, the remaining diced tomatoes with green chilies (plus their juices), the remaining corn, and 1/2 of the remaining cheese.
Step 12 -Place the remaining Doritos in a clean, large resealable plastic bag, seal, and crush them into small pieces.
Step 13 -Evenly sprinkle the remaining crushed Doritos and the remaining cheese over the chicken bake.
Step 14 -Loosely cover the baking dish with foil and bake the chicken bake, about 20 minutes.
Step 15 -Remove and discard the foil, then bake the chicken bake until the cheese starts to brown and the bake is heated through, about 10 minutes.
Step 16 -Serve the chicken bake topped with the grape tomatoes, the cilantro, and the jalapeño slices.
