When you enjoy the Stay-Fit Breakfast, you can feel good knowing you're starting your day off with a well-balanced dish that's loaded with fluffy, protein-filled eggs, flavorful, hearty Candian bacon, and fresh, vitamin-filled curly kale. There's some melty cheese sprinkled in there, too, because your satisfaction is equally important. Stay-Fit Breakfast is the best way to make you feel like the best you!
Ingredients
- 1 bunch fresh curly kale, stems discarded and torn into 3-inch-wide pieces
- 1 tablespoon olive oil
- 2 teaspoons salt, divided
- 1 teaspoon black pepper, divided
- 6 slices Canadian bacon, halved
- 12 large eggs
- 2 cups heavy cream
- 1 cup sharp cheddar cheese, grated, divided
- 1/2 cup parmesan cheese, grated
- 1/4 cup mixed herbs, such as chives, parsley, and/or thyme, chopped, plus more, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large bowl, add the kale pieces and evenly top with the olive oil, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper.
Step 3 -Massage the kale pieces until they are slightly crushed and have softened.
Step 4 -Coat a 10-inch cast-iron skillet with nonstick cooking spray.
Step 5 -Place the coated kale pieces in an even layer in the prepared skillet then evenly top with the Canadian bacon halves.
Step 6 -In a medium bowl, add the eggs and whisk until they are combined.
Step 7 -Add the heavy cream, 3/4 cup of the cheddar cheese, the parmesan cheese, 1/4 cup of the mixed herbs, the remaining salt, and the remaining pepper to the whisked eggs and whisk to combine.
Step 8 -Evenly pour the egg mixture over the Canadian bacon layer, then evenly sprinkle with the remaining cheddar cheese.
Step 9 -Bake the egg mixture until it is set, about 40-45 minutes.
Step 10 -Serve the egg mixture sprinkled with the extra mixed herbs.
