The birds sing in the trees, heralding the coming of spring! You might find yourself singing your own song after a few sips of this Spring Vodka Soda (who doesn't like karaoke after a few drinks?). Bubbly, chilled club soda is flavored with a homemade blueberry and lavender syrup... you can't get any more magically spring-like than that! Bright, sweet, and with a delicate floral flavor, Spring Vodka Soda is as much a sign of the season as buds on the trees... for your taste buds at least!

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 8 ounces blueberries, plus more, to taste, for garnish
  • 1 tablespoon dried culinary lavender, plus 1 sprig culinary lavender, for garnish
  • ice, to taste
  • 2 ounces vodka
  • 6 ounces club soda

Directions

Step 1 -In a saucepan over medium heat, add the sugar, the water, 8 ounces of the blueberries, and 1 tablespoon of the dried culinary lavender and stir to combine.

Step 2 -Allow the sugar mixture to simmer and bubble, while stirring, until the sugar dissolves and the blueberries burst.

Step 3 -Let the lavender-blueberry syrup cool completely.

Step 4 -In a bowl, pour the lavender-blueberry syrup through a fine-mesh strainer, discarding the lavender bits and the blueberry pieces.

Step 5 -Fill a glass with the ice.

Step 6 -Add 1 tablespoon of the lavender-blueberry syrup and the vodka and stir to combine. Add an extra 1 tablespoon of the lavender-blueberry syrup for a sweeter cocktail. Store the remaining lavender-blueberry syrup in an air-tight container in the refrigerator for up to a week.

Step 7 -Fill the glass with the club soda and stir to combine. You may not need all of the club soda.

Step 8 -Served garnished with the extra blueberries and the extra lavender sprig.
