Ingredients

  • For the shrimp fajitas:
  • 1 small red onion, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 orange bell pepper, sliced thin
  • 1 1/2 pounds shrimp, peeled and deveined
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • freshly ground pepper, to taste
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • For serving:
  • lime, optional, to taste
  • fresh cilantro, optional, to taste, chopped
  • tortillas, to taste, warmed

Directions

Step 1 -Preheat the oven to 450 degrees F.

Step 2 -Using a large mixing bowl, add the onions, the yellow bell peppers, the red bell peppers, the orange bell peppers, the shrimp, the olive oil, the salt, the pepper, the chili powder, the garlic powder, the onion powder, the ground cumin, and the paprika and mix until well-combined.

Step 3 -Spray a sheet pan with a nonstick cooking spray.

Step 4 -Spread out the shrimp mixture evenly on the sheet pan.

Step 5 -Roast for about 8 minutes.

Step 6 -Turn on the broiler and cook until the shrimp are cooked through, about 2 minutes.

Step 7 -Squeeze the juice from the lime all over the fajita mix and top it with the fresh cilantro.

Step 8 -Serve in the warm tortillas.
