And not to mention, wooosh, you're tired. The good news is that future you knew this would be the case, so you dropped some School Night Pasta into the slow cooker earlier today before heading out! Now, once all the chore boxes have been checked, everyone can dig into this hearty concoction of bouncy penne and juicy chicken that brings a Tex-Mex flare. Ingredients

  • For the chicken pasta:
  • 1 pound chicken breasts, boneless and skinless, cut into bite-sized pieces
  • 2 tablespoons taco seasoning
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 2 teaspoons garlic, minced
  • 1 (10-ounce) can tomatoes with green chilies
  • 2 cups chicken broth
  • 1 (16-ounce) box penne, cooked
  • 2 cups cheddar cheese, shredded
  • Optional toppings:
  • tomatoes, to taste, chopped
  • sour cream, to taste
  • cilantro leaves, to taste

Directions

Step 1 -In a slow cooker, add the chicken pieces, the taco seasoning, the onions, the bell peppers, the garlic, the tomatoes with green chiles plus their juices, and the chicken broth and stir to combine.

Step 2 -Cover the slow cooker and cook the chicken mixture on low heat until the meat is tender, about 6 hours.

Step 3 -Stir the cooked penne and the cheese into the chicken mixture.

Step 4 -Serve the penne mixture topped with the tomatoes, the sour cream, and the cilantro.
