Ingredients

  • 3 large peaches, diced into 1/2-inch-thick cubes
  • 1 medium tomato, finely diced
  • 3/4 cup red onion, very finely diced
  • 1/2 red bell pepper, finely diced
  • 1 jalapeño, very finely diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup fresh lime juice, plus more, to taste
  • 1/4 teaspoon salt, plus more, to taste
  • 1/4 teaspoon pepper
  • chipotle powder, to taste
  • tortilla chips, optional, to taste, for serving

Directions

Step 1 -In a medium bowl, add the peaches, the tomatoes, the onions, the bell peppers, the jalapeños, the cilantro, 1/4 cup of the lime juice, 1/4 teaspoon of the salt, and the pepper and gently toss to combine.

Step 2 -Taste the peach salsa and adjust with the extra lime and the extra salt, as needed.

Step 3 -Add the chipotle powder to the peach salsa and stir until it is well-combined.

Step 4 -Serve the peach salsa with the tortilla chips.
