The bright, sunshine orange flavor pairs wonderfully with the nutty poppy seeds and being encased in a buttery cookie makes it all the better! Poppy's Orange Cookies are a breeze to make and to eat by the handful! Seriously, it's really hard to say no! Poppy knows her way around sweets!

Ingredients

  • 1/2 cup butter, room temperature
  • 2/3 cup sugar
  • 1 egg, room temperature
  • 1 tablespoon orange zest
  • 1 1/4 cups flour
  • 1/2 teaspoon baking soda
  • salt, to taste
  • 1 tablespoon poppy seeds

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line a large baking sheet with parchment paper or a silicone mat.

Step 3 -In a mixing bowl, add the butter and the sugar and using an electric hand mixer, beat until light and fluffy, about 3 minutes.

Step 4 -Add the egg and the orange zest to the butter-sugar mixture and beat for 30 seconds. Make sure to scrape down the sides and bottom of the bowl.

Step 5 -In a separate bowl, add the flour, the baking soda, and the salt and whisk to combine.

Step 6 -Slowly sift the flour mixture into the butter mixture and beat until just combined into a dough.

Step 7 -Add the poppy seeds to the dough mixture and fold to combine.

Step 8 -Place the cookie dough by the heaping teaspoonful onto the prepared baking sheet, spacing the cookies about 1 inch apart so they can spread while baking.

Step 9 -Bake until they are just turning golden around the edges, about 10-12 minutes.

Step 10 -Transfer the cookies from the oven and let them rest on the baking sheet for 1-2 minutes.

Step 11 -Transfer the cookies to a wire rack to cool completely.

Step 12 -Serve.
