Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 medium yellow onion, chopped
- 2 ribs celery, chopped
- 2 large carrots, peeled and cut into 1/3-inch pieces
- 1 teaspoon sea salt, divided, plus more, to taste
- 4 cloves garlic, minced
- 8 cups chicken stock
- 3 cups chicken, cooked and shredded
- 1 (16-ounce) box orzo
- 1 tablespoon flat leaf parsley, minced
- 1 1/4 teaspoons garlic powder
- 1 teaspoon Italian seasoning
- 1/4 teaspoon cracked black pepper
Directions
Step 1 -In a large pot over medium heat, add the olive oil and heat until it is shimmering.
Step 2 -Add the onions, the celery, the carrots, and 1/2 teaspoon of the salt and cook, while stirring, until the onions are translucent, about 7 minutes.
Step 3 -Add the garlic cloves to the onion mixture and cook, while stirring, until fragrant, about 1-2 minutes.
Step 4 -Add the chicken stock to the onion mixture and stir to combine.
Step 5 -Increase the heat to high and bring the stock mixture to a boil.
Step 6 -Add the chicken and the orzo to the boiling stock mixture and stir to combine.
Step 7 -Reduce the heat to medium.
Step 8 -Add the parsley, 1/2 teaspoon of the remaining salt, the garlic powder, the Italian seasoning, and the black pepper to the stock mixture and stir to combine.
Step 9 -Simmer the orzo mixture until the vegetables and the orzo are tender and most of the liquid has been absorbed, about 20 minutes.
Step 10 -Taste the orzo for seasoning and add the extra salt, as needed.
Step 11 -Serve.
