Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 1 1/4 cups sugar, divided
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup sour cream
  • 2 teaspoons vanilla
  • 3 eggs
  • 1 (21 ounce) can cherry pie filling

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Add the graham cracker crumbs, butter, and 1/4 cup of the sugar together in a mixing bowl, combining until a sandy mixture forms.

Step 3 -Press the crust mixture into the bottom of a 9-inch springform pan.

Step 4 -Beat in the cream cheese and the remaining 1 cup of the sugar into a large mixing bowl using a hand mixer until it is completely blended.

Step 5 -Add in the sour cream and vanilla, mixing well.

Step 6 -Add in the eggs one at a time, beating them at a low speed after every egg is added until just mixed.

Step 7 -Pour the custard over the crust.

Step 8 -Bake until the center of the cheesecake is barely set, about 1 hours-1hr 10 minutes.

Step 9 -Run a knife around the rim of the pan to loosen the cake and allow it to cool before removing the rim of the springform.

Step 10 -Refrigerate the cheesecake for about 4 hours to completely set it.

Step 11 -Garnish the cheesecake with the cherry pie filling before serving.
