Nona's Favorite Gnocchi Soup just so happens to be our favorite soup. What started out as her attempt to re-create a soup from one of our go-to chain restaurants turned into her achieving the creamier, tastier version! It has chunks of juicy chicken, lots of tender potato gnocchi, and just the right amount of veggies to ensure you'll be full and satisfied after every bowl. Don't be surprised if Nona's Favorite Gnocchi Soup quickly becomes your favorite, too! It seems to have that superpower!

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 1/2 pounds chicken breast, boneless and skinless, cut into bite-sized pieces
  • 1 onion, diced
  • 1 1/2 large carrots, diced
  • 2 ribs celery, diced
  • 1/2 cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1/2 teaspoon dried thyme, plus more, to taste, for garnish
  • 1 (16-ounce) package potato gnocchi
  • 2 cups half-and-half
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach, chopped

Directions

Step 1 -In a large pot, add the butter and the oil and heat until the butter is melted.

Step 2 -Add the garlic to the butter mixture and stir, about 10 seconds.

Step 3 -Add the chicken pieces to the garlic mixture and cook, while stirring, until they reach an internal temperature of 165 degrees F.

Step 4 -Add the onions, the carrots, and the celery pieces to the chicken mixture and cook, stirring occasionally, until the onions become translucent.

Step 5 -Add the flour to the chicken mixture and stir until the raw flour smell dissipates.

Step 6 -Slowly pour the chicken broth into the chicken mixture, stirring constantly to prevent the flour from clumping.

Step 7 -Add 1/2 teaspoon of the thyme and the potato gnocchi to the soup mixture and stir to combine. Bring it to a boil.

Step 8 -Reduce the heat to a simmer and cook the soup, about 5-10 minutes.

Step 9 -Add the half-and-half, the salt, and the pepper to the soup and bring it to a boil.

Step 10 -Add the spinach to the soup and stir until it is wilted, about 5 minutes.

Step 11 -Serve the soup garnished with the extra thyme.
