Moms are magical. They know all the tips and tricks on how to get everyone what they need while also making each experience delightful. Take Mom's Sheet-Pan Meatloaf, for example. It's ready in under an hour, makes enough to serve the whole family plus leftovers, and only gets a few dishes dirty... so, yeah. It's efficient. But that's not all! It's loaded with juicy, meaty, tangy flavors that are loved by even the pickiest of eaters. See? They always find mind-blowing ways to get things done while still going above and beyond. We will never totally understand how they do it all, but we're grateful we get to enjoy Mom's Sheet-Pan Meatloaf, nonetheless!
Ingredients
- 2 cups ketchup, divided
- 1 cup plain dry breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 2 tablespoons Worcestershire sauce, divided
- 1 1/2 pounds ground beef
- 1 1/2 pounds ground pork
- 1 medium onion, grated and lightly squeezed of excess liquid
- 2 cloves garlic, minced
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 tablespoon light brown sugar
- 1 1/2 teaspoons apple cider vinegar
- 3/4 teaspoon chipotle chile powder
Directions
Step 1 -Position a rack in the upper third of the oven.
Step 2 -Preheat the oven to 375 degrees F.
Step 3 -Mix 1 1/2 cups of the ketchup, the breadcrumbs, the milk, the eggs, the parsley, and 1 tablespoon of the Worcestershire sauce together in a large bowl
Step 4 -Allow the breadcrumbs to absorb the liquid, about 3 minutes.
Step 5 -Add the ground beef, the ground pork, the onion, the garlic, the salt, and the pepper to the bowl and mix until it is combined. Be careful not to overmix.
Step 6 -Transfer the meat mixture to an 18x13-inch rimmed sheet pan and press it into an even layer covering the entire surface.
Step 7 -Whisk the remaining ketchup, the remaining Worcestershire sauce, the brown sugar, the cider vinegar, and the chipotle powder in a small bowl.
Step 8 -Brush the meatloaf with the ketchup sauce.
Step 9 -Bake the meatloaf until the meat is cooked through, about 20 minutes.
Step 10 -Switch the oven to broil and cook until the top of the meatloaf becomes caramelized and dark in spots, about 3-4 minutes.
Step 11 -Let the meatloaf rest for 5 minutes.
Step 12 -Serve.
