Ingredients

  • For the cookies:
  • 1 (15.25-ounce) lemon cake mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon lemon zest
  • For the icing:
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon milk

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line cookie sheet with parchment paper or coat it with nonstick spray.

Step 3 -In a large bowl, mix the lemon cake mix, the vegetable oil, the eggs, and the lemon zest together until combined. The batter will be thick, but be careful not to overmix.

Step 4 -Drop the batter by the tablespoonful onto the prepared cookie sheet, giving each drop about 2 inches of space.

Step 5 -Bake until the cookies are very lightly golden and just beginning to set, about 8 minutes.

Step 6 -Let the cookies cool on a wire rack.

Step 7 -Mix the powdered sugar, the lemon juice, and the milk together until an icing forms.

Step 8 -Drizzle the icing on top of the cooled cookies.

Step 9 -Serve.
