These little treats are sweet and inviting, with notes of floral honey and warm cinnamon, with little bursts of jammy raisins for texture. Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup whole-wheat flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 eggs, slightly beaten
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1/3 cup honey
- 3/4 cup raisins
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a 12-cup muffin tin with paper liners.
Step 3 -In a large bowl, sift the all-purpose flour, the whole-wheat flour, the baking powder, the cinnamon, and the salt and whisk lightly to combine.
Step 4 -In a medium bowl, add the eggs, the brown sugar, the oil, the milk, and the honey and whisk to combine.
Step 5 -Add the wet ingredients mixture to the dry ingredients mixture and stir until it is just combined.
Step 6 -Add the raisins to the batter and fold to combine.
Step 7 -Fill each of the prepared muffin cups about 2/3 full with the batter.
Step 8 -Bake until a toothpick inserted into the center of 1 of the muffins comes out clean, about 18-25 minutes.
Step 9 -Transfer the muffin tin to a wire rack and allow the muffins to cool for 5 minutes.
Step 10 -Serve warm.
