Ingredients

  • 1 pound ground beef
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 tablespoon vegetable oil
  • 5 slices cheddar cheese, quartered for a total of 20 pieces
  • 6 leaves bibb lettuce, torn
  • 1 cup dill pickle chips
  • 1 pint cherry tomatoes

Directions

Step 1 -In a large bowl, add the ground beef, the breadcrumbs, the egg, the garlic, the Worcestershire, the mustard, the salt, and the pepper and using your clean hands, mix gently but thoroughly until fully combined.

Step 2 -Form the meat mixture into 20 small meatball-sized patties by hand, trying to keep the patties as evenly sized as possible.

Step 3 -In a large skillet over medium heat, add the vegetable oil.

Step 4 -Working in small batches, cook the patties until they reach an internal temperature of 145 degrees F for medium doneness, about 2 minutes per side.

Step 5 -Top each of the cooked patties with 1 of the cheese squares and immediately cover the skillet with a lid until the cheese is melted, about 2 minutes.

Step 6 -Transfer the beef patties to a clean plate.

Step 7 -Repeat the cooking process until all of the patties are cooked and all of the cheese squares are used.

Step 8 -On an appetizer skewer, add 1 cooked patty, 1 piece of the lettuce, 1 of the pickle chips, and 1 of the cherry tomatoes.

Step 9 -Repeat the skewer process until all of the patties are used. You may have leftovers of the lettuce, the pickle chips, and the tomatoes, which can be saved for a separate use or added on as extras to some of the skewers.

Step 10 -Serve.
