Every year, the Heisman Memorial Trophy® is awarded to the most outstanding player in college football. In the spirit, the name should only be invoked by the most outstanding dessert! The Heisman® Crumble sautés fresh, floral, juicy peaches in butter, sugar, and spices until it becomes tender and sweet, then tops it with a cookie crumble and crunchy, buttery pecans. Baked golden-brown and served with ice cream, the Heisman Crumble can certainly go the distance; it's already a champion in the eyes of your taste buds!

Ingredients

  • 2 tablespoons butter
  • 4 (15.25-ounce) cans sliced peaches, drained
  • 1 3/4 cups sugar, divided
  • 3 teaspoons vanilla extract, divided
  • 1 teaspoon crystallized ginger, finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1 cup shortening
  • 1/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • pecans, optional, to taste, chopped
  • coarse sugar, optional, to taste
  • vanilla ice cream, optional, to taste, for serving

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -In a 12-inch cast-iron or other ovenproof skillet over medium heat, melt the butter.

Step 3 -Add the peaches, 3/4 cup of the sugar, 2 teaspoons of the vanilla, the ginger, and the cinnamon.

Step 4 -Cook and stir the peaches until they soften and begin to break down, about 10 minutes.

Step 5 -Transfer the skillet from the heat.

Step 6 -In a large bowl, cream the shortening, the brown sugar, and the remaining sugar until light and fluffy, about 5-7 minutes.

Step 7 -Beat in the egg, the almond extract, and the remaining vanilla.

Step 8 -In another bowl, whisk together the flour, the cornstarch, the baking soda, and the baking powder.

Step 9 -Gradually add the dry ingredients mixture to the cream mixture until a dough forms.

Step 10 -Crumble the dough over the peaches in the skillet.

Step 11 -Sprinkle the top with the pecans and the coarse sugar.

Step 12 -Bake until a toothpick inserted into the center comes out clean, about 35-40 minutes.

Step 13 -Cool on a wire rack and serve with the ice cream.
