Ingredients

  • 8 ounces fettuccine
  • 1 tablespoon extra-virgin olive oil
  • 1 1/4 cups low-fat cottage cheese
  • 1 cup 2% milk
  • 1/3 cup parmesan, shredded, packed
  • 2 small cloves garlic, finely chopped
  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon all-purpose flour
  • 1 teaspoon salt
  • 3 ounces baby spinach
  • crushed red pepper flakes, optional, to taste, for topping

Directions

Step 1 -In a pot of salted, boiling water, add the fettucine and cook until almost al dente, about 1 minute less than the package directions.

Step 2 -Reserve 1/2 cup of the pasta water and drain the remainder.

Step 3 -Transfer the drained pasta to a large bowl.

Step 4 -Add the olive oil to the pasta and toss to combine.

Step 5 -In a blender or food processor, add the cottage cheese, the milk, the parmesan cheese, the garlic, the butter, the flour, and the salt and pulse until smooth.

Step 6 -In a large skillet over medium heat, add the cottage cheese mixture.

Step 7 -Bring the cottage cheese mixture to a simmer and cook, while stirring frequently, until thickened into a sauce, about 8-10 minutes.

Step 8 -Add the spinach to the sauce mixture and stir until wilted, about 1-2 minutes.

Step 9 -Add the cooked pasta to the skillet and toss in the sauce to coat, adding the reserved pasta water, a little at a time, as needed to thin the sauce if it becomes too thick. You may not need all or any of the reserved pasta water.

Step 10 -Continue to cook and toss until the pasta is al dente, about 1 minute.

Step 11 -Serve topped with the red pepper flakes
