Ingredients

  • 1 small head green cabbage, chopped
  • 1 bunch green onions, roughly chopped
  • 3 baby cucumbers or 1 English cucumber, finely diced
  • 1/4 cup chives, diced
  • 1 cup mixed soft herbs, such as basil, parsley, and dill
  • 1 cup spinach
  • 1 shallot, peeled and cut in half
  • 2 cloves garlic, peeled and whole
  • 1/3 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/4 cup walnuts, can substitute pecans, cashews, or hazelnuts
  • 2 lemons, juiced
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon sea salt
  • pita bread, optional, to taste, toasted and sliced, for serving

Directions

Step 1 -In a large bowl, add the cabbage, the green onions, the cucumbers, and the chives and toss to combine.

Step 2 -In a blender or a food processor, add the soft herbs, the spinach, the shallots, the garlic cloves, the nutritional yeast, the olive oil, the walnuts, the lemon juice, the rice wine vinegar, and the sea salt and blend until the herbs and the spinach have broken down and the mixture is smooth, about 2 minutes.

Step 3 -Add the dressing mixture to the cabbage mixture and toss to combine.

Step 4 -Serve with the pita bread.
