General Tso's Chicken is exactly what you want served atop white rice so you don’t miss any of that amazing sauce.
Ingredients
- For the chicken:
- 2 eggs, lightly beaten
- salt, to taste
- pepper, to taste
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- vegetable oil, to taste, for frying
- 1 1/2 pounds chicken thighs, boneless, skinless, and cut into 1-inch pieces
- For the sauce:
- 2 teaspoons vegetable oil
- 2 teaspoons garlic, minced
- 1/2 teaspoon red pepper flakes, crushed
- 3/4 cup low-sodium chicken broth
- 2 tablespoons hoisin sauce
- 2 tablespoons brown sugar
- 1/4 cup low-sodium soy sauce
- 1 tablespoon cornstarch
- For the garnish:
- 2 teaspoons sesame seeds, optional
- 2 tablespoons green onions, optional, sliced
Directions
Step 1 -Add the eggs into a mixing bowl.
Step 2 -Season the eggs with salt and pepper to taste.
Step 3 -In a separate shallow bowl, mix together the flour and cornstarch.
Step 4 -In a deep pot, heat 3 inches of oil to 350 degrees F.
Step 5 -Dip each piece of chicken into the egg mixture.
Step 6 -Coat each piece of chicken in the flour mixture.
Step 7 -Repeat the process until all of the chicken is coated.
Step 8 -In batches, fry the chicken in the heated oil until browned, about 5 minutes. Be careful not to fry too many chicken pieces at once to avoid clumping. 6-8 pieces at a time should be a good batch size.
Step 9 -Heat 2 teaspoons of the vegetable oil in a saucepan over medium heat.
Step 10 -Add the garlic and crushed red pepper flakes and cook for 30 additional seconds.
Step 11 -In a mixing bowl, whisk together the chicken broth, hoisin sauce, brown sugar, soy sauce, and cornstarch.
Step 12 -Add the liquid mixture to the saucepan and bring to a simmer.
Step 13 -Allow the sauce to thicken, cooking for 2-3 minutes.
Step 14 -Add the chicken to the saucepan and toss to coat with the sauce.
Step 15 -Sprinkle the chicken with sesame seeds and green onions and serve.
