Scoop it on a slice of wheat bread, and you've got yourself the perfect centerpiece for your almost-fall picnic. Fall-Favorite Chicken Salad is the tastiest way to kick things off!
Ingredients
- 1/2 cup mayonnaise
- 3 tablespoons honey mustard
- 2 tablespoons fresh lemon juice
- kosher salt, to taste
- freshly ground black pepper, to taste
- 3 cups rotisserie chicken, coarsely chopped
- 1 medium Granny Smith apple, coarsely chopped
- 1 cup small pecans
- 1/2 cup dried cherries, can substitute dried cranberries
- whole-wheat bread slices, optional, to taste, for serving
Directions
Step 1 -In a medium bowl, add the mayonnaise, the honey mustard, the lemon juice, the salt, and the pepper and stir to combine.
Step 2 -Stir the chicken pieces, the chopped apples, the pecans, and the cherries into the dressing mixture.
Step 3 -Cover the bowl and chill the chicken salad in the refrigerator, about 1-2 hours.
Step 4 -Serve the chicken salad on the bread slices.
