Ingredients

  • 1/2 cup mayonnaise
  • 3 tablespoons honey mustard
  • 2 tablespoons fresh lemon juice
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 3 cups rotisserie chicken, coarsely chopped
  • 1 medium Granny Smith apple, coarsely chopped
  • 1 cup small pecans
  • 1/2 cup dried cherries, can substitute dried cranberries
  • whole-wheat bread slices, optional, to taste, for serving

Directions

Step 1 -In a medium bowl, add the mayonnaise, the honey mustard, the lemon juice, the salt, and the pepper and stir to combine.

Step 2 -Stir the chicken pieces, the chopped apples, the pecans, and the cherries into the dressing mixture.

Step 3 -Cover the bowl and chill the chicken salad in the refrigerator, about 1-2 hours.

Step 4 -Serve the chicken salad on the bread slices.
