Your favorite pasta is tossed in a simple yet rich and savory sauce with notes of tomato and tangy artichoke. Sounds good already, doesn't it? Throw in some sharp feta, crunchy pine nuts, and herbaceous pesto and Everyday Pasta is ready to prove that, despite the name, it's extraordinary! And so speedy to boot!

Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium red onion, diced
  • 1 (14.5-ounce) can diced tomatoes
  • 1/3 cup chicken stock
  • 1/3 cup assorted olives, pitted and halved
  • 1 (6-ounce) jar artichoke hearts, drained, hearts halved
  • 2 cloves garlic, minced
  • salt, to taste
  • freshly ground black pepper, to taste
  • 8 ounces pasta, of your choice, cooked
  • 3 tablespoons jarred pesto
  • 1/2 cup feta, fork-chunked
  • 3 tablespoons pine nuts, toasted

Directions

Step 1 -In a skillet over medium heat, add the olive oil.

Step 2 -Add the red onions to the hot oil and cook, while stirring, until they become translucent, about 2-3 minutes.

Step 3 -Add the tomatoes and their juices, the chicken stock, the olives, the artichoke hearts, the garlic, the salt, and the black pepper to the onions and stir to combine.

Step 4 -Reduce the heat to low and simmer the sauce mixture, while stirring occasionally, until thickened, about 15 minutes.

Step 5 -Add the pasta to the sauce mixture and toss to combine.

Step 6 -Add the pesto to the pasta mixture and toss to combine.

Step 7 -Sprinkle the feta and the pine nuts on top of the pasta mixture.

Step 8 -Serve.
