Ingredients

  • 1 cup unsalted butter
  • 1/2 onion, finely diced
  • 4 cloves garlic, finely minced
  • 1/2 lemon, juiced
  • 1 bay leaf
  • 1 teaspoon Old Bay® Seasoning
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 tablespoon brown sugar
  • 1 tablespoon hot sauce
  • 1 teaspoon red crushed pepper
  • salt, to taste
  • black pepper, to taste
  • 6 eggs, hard-boiled, peeled
  • herbs, to taste, of your choice, for garnish

Directions

Step 1 -In a large skillet over medium heat, melt the butter.

Step 2 -Add the onions and cook, while stirring, until tender, about 3-4 minutes.

Step 3 -Add the garlic and cook until fragrant, about 1-2 minutes.

Step 4 -Add the lemon juice, the bay leaf, the Old Bay Seasoning, the paprika, the garlic powder, the onion powder, the oregano, the cayenne pepper, the brown sugar, the hot sauce, and the crushed red pepper and cook, while stirring frequently, until combined and very fragrant, about 2-3 minutes.

Step 5 -Season the spice mixture with the salt and the pepper.

Step 6 -Add the eggs and cook, while stirring, until the eggs are coated and warmed, about 1 minute.

Step 7 -Garnish with the herbs and serve.
