Ingredients

  • 1 (4-pound) round roast
  • 1/4 cup extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper, freshly ground

Directions

Step 1 -Allow the roast to sit uncovered at room temperature for 1 to 2 hours.

Step 2 -Preheat the oven to 450 degrees F.

Step 3 -In a small bowl, combine the oil, garlic, rosemary, thyme, salt, and pepper.

Step 4 -Rub the mixture all over the roast.

Step 5 -Place the roast in a roasting pan fitted with a roasting rack.

Step 6 -Roast for 15 minutes, then reduce heat to 325 degrees F and roast for an additional 1 hour and 45 minutes for medium, or 2 hours for medium-well.

Step 7 -Remove from the oven and allow the roast to rest for 15 to 30 minutes.

Step 8 -Serve warm.
