The Earth-Shakin' Cake is about to get your taste buds shaking with its sweetness! It's a rich chocolate cake with dollops of sweetened cream cheese frosting baked right into it! And then it's topped with melted chocolate chips , while being supported by a base of crunchy pecans and coconut. This is a tectonic (get it) dessert indeed! Ingredients
- 1 1/2 cups pecans, chopped
- 1 1/2 cups sweetened shredded coconut
- 1 (13.25-ounce) box chocolate fudge cake mix, plus the ingredients called for on the package
- 1 1/4 cups semisweet chocolate chips, divided
- 1/2 tablespoon flour
- 1/2 cup unsalted butter
- 1 (8-ounce) package cream cheese, room temperature
- 3 cups powdered sugar
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking pan with nonstick spray.
Step 3 -In the prepared baking pan, evenly sprinkle the pecans and the coconut.
Step 4 -In a large bowl, prepare the chocolate fudge cake batter, according to the package directions.
Step 5 -In a small bowl, add 3/4 cup of the chocolate chips and the flour and stir to combine.
Step 6 -Add the flour-coated chocolate chips to the cake batter and fold to combine.
Step 7 -Spoon the cake batter mixture over the pecans and the coconut in the baking pan.
Step 8 -In a microwave-safe bowl, add the butter and microwave it until it has just melted.
Step 9 -Allow the melted butter to cool slightly.
Step 10 -In a bowl, add the cream cheese and using an electric handheld mixer, beat until smooth.
Step 11 -Slowly add the melted butter to the beaten cream cheese, while beating, until smooth and combined.
Step 12 -Add the powdered sugar, 1 cup at a time, to the cream cheese mixture and beat after each addition until smooth.
Step 13 -Dollop the cream cheese mixture by the rounded tablespoonful randomly over the top of the cake batter in the baking pan.
Step 14 -Sprinkle the remaining chocolate chips over the cream cheese mixture dollops and the cake batter in the baking pan.
Step 15 -Bake until the chocolate cake is set, about 40-50 minutes.
Step 16 -Serve.
