Ingredients

  • 1 tablespoon almonds, sliced
  • 1/2 cup white sugar
  • 1/4 cup rum
  • 1/4 cup butter
  • 2 plantains, peeled and sliced
  • ground cinnamon, to taste

Directions

Step 1 -In a skillet over medium-high heat, add the almonds and cook, while stirring, until they are golden and toasted, about 2-4 minutes. Set it aside.

Step 2 -In a microwave-safe bowl, add the sugar, the rum, and the butter and stir to combine.

Step 3 -Cover the bowl with a lid or plastic wrap and microwave, stirring once about halfway through, until hot, about 2-3 minutes.

Step 4 -Add the plantain slices to the rum sauce.

Step 5 -Sprinkle the plantain slices with the cinnamon.

Step 6 -Cover the bowl again and microwave until the plantains are hot and tender, about 1-2 minutes.

Step 7 -Top the plantains with the toasted almonds.

Step 8 -Serve.
