Ingredients
- 2 russet potatoes, peeled
- 3 tablespoons clarified butter
- salt, to taste
- ground black pepper, to taste
- cayenne pepper, to taste
- paprika, to taste
Directions
Step 1 -Fill a large bowl with cold water.
Step 2 -Shred the potatoes in the cold water.
Step 3 -Stir the potatoes until the water is cloudy.
Step 4 -Drain the potatoes and then cover them again with cold, clean water.
Step 5 -Repeat the process until the water runs clear. This removes the excess starch from the potatoes and helps ensure a crispy texture in the final product.
Step 6 -Drain the potatoes a final time and pat them as dry as possible with paper towels.
Step 7 -Squeeze any excess moisture from the potatoes. Moisture can make the hash browns less crispy.
Step 8 -Heat the clarified butter in a large non-stick pan over medium heat.
Step 9 -Sprinkle the shredded potatoes into the hot butter.
Step 10 -Season the potatoes with salt, pepper, cayenne, and paprika.
Step 11 -Cook the potatoes until a brown crust forms on the bottom, about 5 minutes.
Step 12 -Flip the potatoes and continue to cook until browned all over, about 5 minutes.
Step 13 -Serve hot.
