  • 6 tablespoons butter, melted and divided
  • 4 cups sourdough rolls, cubed
  • 1/3 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 2 medium sweet onions, sliced
  • 1 (8-ounce) package fresh mushrooms, sliced
  • 1 cup white wine
  • 1 (10.75-ounce) can cream of mushroom soup
  • 1/2 cup jarred roasted red bell peppers, drained and chopped
  • 2 1/2 cups chicken, cooked and shredded

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Lightly grease a 9-inch square baking dish.

Step 3 -In a bowl, toss 4 tablespoons of the butter with the rolls, the cheese, and the parsley.

Step 4 -In a large skillet over medium-high heat, sauté the onions in the remaining butter until golden brown, about 15 minutes.

Step 5 -Add the mushrooms to the onions and sauté for 5 minutes.

Step 6 -Stir the wine, the cream of mushroom soup, the peppers, and the chicken into the onion mixture and cook, stirring constantly, until bubbly, about 5 minutes.

Step 7 -Spoon the chicken mixture into the prepared baking dish and top with the bread mixture.

Step 8 -Bake until golden brown, about 15 minutes.
