Ingredients

  • For the lemon-ginger simple syrup:
  • 2 cups water
  • 2 cups sugar
  • 4 tablespoons ground ginger
  • 1 cup lemon juice
  • For the cocktail:
  • lime wheels, optional, to taste
  • coarse salt, optional, to taste
  • ice, to taste
  • 3 ounces tequila
  • 4 ounces orange juice
  • ground cayenne pepper, optional, to taste, for garnish

Directions

Step 1 -In a saucepan over medium-high heat, add the water, the sugar, the ground ginger, and the lemon juice and stir to combine.

Step 2 -Bring the sugar mixture to a boil.

Step 3 -Reduce the heat to medium-low and simmer until the sugar is completely dissolved and the syrup thickens slightly, about 10 minutes.

Step 4 -Transfer the saucepan from the heat and allow the lemon-ginger simple syrup to cool.

Step 5 -Rub the rim of the intended serving glass with one of the lime wheels.

Step 6 -Add the coarse salt to a plate or shallow bowl. Place the lime-coated glass rim into the salt.

Step 7 -In a cocktail shaker and in a rocks glass, add the ice.

Step 8 -Add the tequila, 1 1/2 tablespoons of the lemon-ginger simple syrup, and the orange juice to the cocktail shaker. Store the remaining lemon-ginger simple syrup in the refrigerator for up to a week.

Step 9 -Cover the shaker and shake vigorously to combine.

Step 10 -Strain the cocktail into the prepared rocks glass.

Step 11 -Garnish with the cayenne and the lime wheels and serve.
