Fire up the grill for taco night. Marinating the flank steak for a few hours in Mexican-inspired flavors makes the beef super tender and delicious. Ingredients

  • For the carne asada:
  • 1/3 cup olive oil
  • 3 limes, juiced
  • 1/2 cup fresh cilantro, optional, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1/2 teaspoon chili powder
  • salt, to taste
  • pepper, to taste
  • 1 1/2 pounds flank steak
  • For the tacos:
  • 2 avocados
  • 6 tortillas
  • 3 tablespoons cotija cheese
  • 1/3 cup onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • limes, for garnish

Directions

Step 1 -In a small bowl, whisk together the olive oil, lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper together to make the marinade.

Step 2 -Add the flank steaks to a glass or non-stick lipped tray or in a zipped plastic bag and pour the marinade on top. Ensure the steaks are well coated.

Step 3 -Cover or zip up and allow the meat to marinate for 1-4 hours.

Step 4 -When the meat is finished marinating, preheat the grill on medium-high heat.

Step 5 -Grill the carne asada to the desired doneness, 120-125 degrees F internally for medium-rare.

Step 6 -Slice the carne asada against the grain and then chop it. Slicing it against the grain shortens the muscle fibers and results in a more tender chew.

Step 7 -Mash the avocados with a spoon or fork. Spread a spoonful of avocado onto a tortilla.

Step 8 -Top the avocado with the carne asada, cotija cheese, diced onion, and fresh cilantro.

Step 9 -Serve with fresh lime juice!
