Ingredients

  • For the soup:
  • 3 cups ground beef, cooked
  • 1 1/4 cups onions, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (1-ounce) envelope ranch dressing mix
  • 1 (1-ounce envelope) taco seasoning
  • 1 (15.5-ounce) can whole kernel corn
  • 1 (15.5-ounce) can diced tomatoes
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 3 (15.5-16-ounce) cans pinto beans
  • 2 cups water
  • Optional, for topping:
  • sour cream, to taste
  • cheddar cheese, to taste, shredded
  • cilantro, to taste
  • green onions, to taste, chopped

Directions

Step 1 -In a slow cooker, add the cooked beef, the onions, the salt, the black pepper, the ranch dressing mix, the taco seasoning, the corn and its liquid, the diced tomatoes and their juices, the diced tomatoes with green chilies and their juices, the pinto beans and their liquid, and the water and stir to combine.

Step 2 -Cover the slow cooker and cook on low until the flavors meld together, about 6-8 hours.

Step 3 -Serve topped with the sour cream, the cheddar cheese, the cilantro, and the green onions.
