Ingredients

  • 2 tablespoons sesame oil, divided
  • 1/2 pound shrimp, peeled and deveined
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/3 cup carrots, thinly sliced
  • 1/2 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cold water
  • 2 teaspoons cornstarch
  • 6 ounces spaghetti, cooked and warm
  • 3 green onions, chopped
  • sesame seeds, black and/or white, to taste, for garnish

Directions

Step 1 -In a large skillet over medium-high heat, add 1 tablespoon of the oil.

Step 2 -Add the shrimp, the green bell peppers, the red bell peppers, the broccoli florets, and the carrots to the heated oil and cook until the shrimp reaches an internal temperature of 145 degrees F and the veggies are tender, about 5-7 minutes.

Step 3 -In a bowl, whisk the soy sauce, the brown sugar, the remaining oil, the cold water, and the cornstarch together.

Step 4 -Pour the sauce over the shrimp mixture and bring to a boil.

Step 5 -Reduce the heat to a simmer.

Step 6 -Stir the cooked spaghetti and the green onions into the shrimp mixture and cook until all the ingredients are coated in the sauce, about 3-5 minutes.

Step 7 -Serve the shrimp lo mein garnished with the sesame seeds.
