Ingredients

  • 1 tablespoon butter
  • 1 onion, chopped
  • 1 cup corn
  • 1 (30-ounce) can black beans, drained and rinsed
  • 2 (14.5-ounce) cans diced tomatoes
  • 1/2 teaspoon chili powder
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 2 cups vegetable broth
  • 1/2 cup honey
  • salt, to taste
  • pepper, to taste
  • 2 cups white rice, cooked and warm

Directions

Step 1 -In a large skillet over medium-high heat, melt the butter.

Step 2 -Add the onion, the corn, the black beans, and the tomatoes to the butter and sauté until tender, about 5 minutes.

Step 3 -Add the chili powder, the garlic, the oregano, the broth, and the honey to the veggie mixture and bring to a boil.

Step 4 -Boil the stew until it thickens, about 5-10 minutes.

Step 5 -Taste the stew for seasoning and add the salt and the pepper as desired.

Step 6 -Serve the stew over the warm rice.
