Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup water, divided
  • 1/2 cup brown sugar
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon cornstarch

Directions

Step 1 -Add the chicken to the slow cooker.

Step 2 -In a small bowl mix together the tarragon, the salt, the pepper, and 1/2 cup of the water.

Step 3 -Pour the seasoning mixture over the chicken.

Step 4 -Cover and cook on high for 2 1/2 hours.

Step 5 -In a saucepan, mix the brown sugar, the soy sauce, the balsamic vinegar, the cornstarch, and the remaining water.

Step 6 -Heat over medium heat on the stovetop until the sauce starts to thicken.

Step 7 -Pour the sauce over the chicken while still in the slow cooker and toss to coat.

Step 8 -Cook the chicken mixture in the slow cooker for 1 hour on low.

Step 9 -Remove the chicken thighs to a cutting board or baking sheet and shred with two forks.

Step 10 -Serve with the sauce on the side.
