Nourishing oats, creamy and sweet bananas, melty bits of chocolate, and crunchy walnuts will make sure you have the energy, both physical and emotional, to take on the day! Breakfast Surprise Cookies are a snap to make and so, so easy to bring with you wherever you're heading!
Ingredients
- 3 medium bananas, mashed
- 2 cups quick-cooking oats
- 1/2 cup walnuts, chopped
- 1/2 cup semisweet chocolate chips, optional
- 1/3 cup applesauce
- 1/4 cup milk or almond milk
- 1/4 cup raisins
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/8 teaspoon salt, optional
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a baking pan with parchment paper.
Step 3 -In a large bowl, add all of the ingredients and mix until well-combined.
Step 4 -Scoop the banana mixture by the heaping tablespoonful onto the prepared baking pan. There should be about 20-24 total.
Step 5 -Gently press each dollop of the banana mixture down with a fork to flatten them slightly.
Step 6 -Bake until lightly browned, about 15-18 minutes.
Step 7 -Allow the cookies to cool completely.
Step 8 -Serve.
