Blueberry Compote is a delicious dish that feels refreshing like a summer treat, yet luxurious and filling like an autumn or winter dessert! Best of all worlds! The blueberries become thick, rich, and jammy, with notes of lemon and vanilla to accent the fresh, tart, sweet blueberry flavors. Pour Blueberry Compote over vanilla ice cream or a cake, or spread it on some toast in the morning... or just eat it with a spoon... the possibilities are truly endless.
Ingredients
- 2 cups fresh blueberries, divided
- 1/4 cup maple syrup
- 2 tablespoons water
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract
Directions
Step 1 -In a small saucepan over medium heat, add 1 cup of the blueberries, the maple syrup, the water, the lemon juice, and the vanilla and stir to combine.
Step 2 -Simmer the blueberry mixture, while stirring occasionally, until the blueberries release their juices and break down, about 10 minutes.
Step 3 -Add the remaining blueberries to the compote mixture and cook, while stirring occasionally, until thick and jammy, about 8 minutes.
Step 4 -Serve.
