Black Forest Icebox Cookies will walk you right back to Grandma's kitchen and it's a lovely place to be! Wafer cookies are snuggled with a brandy-infused mascarpone cheese mixture, topped with a splendid cherry concoction, and drizzled with melted chocolate for the full Black Forest experience. Don't be stumped (haha, tree pun); Black Forest Icebox Cookies will be that surprising blast from the past you'll love!
Ingredients
- 3 tablespoons Domino Premium Pure Cane Granulated Sugar
- 4 teaspoons Argo 100% Pure Corn Starch
- Morton's Sea Salt, to taste
- 3/4 cup fresh or frozen pitted tart cherries, thawed if frozen, coarsely chopped
- 3/4 cup bottled cherry juice blend
- 1 1/2 teaspoons lemon juice
- 1-2 drops Happy Home Flavoring Red Food Color, optional
- 1/2 cup mascarpone cheese
- 1 tablespoon Domino Confectioners Sugar
- 1 teaspoon cherry brandy
- 1 (9-ounce) package chocolate or vanilla wafer cookies
- 1/2 cup semisweet chocolate chips
- 1/4 cup heavy cream
Directions
Step 1 -Line an 18x26-inch baking sheet with waxed paper.
Step 2 -In a small saucepan over medium-high heat, add the granulated sugar, the cornstarch, the salt, the cherries, the cherry juice blend, and the lemon juice and bring the mixture to a boil, while stirring constantly.
Step 3 -Cook the cherry mixture until thickened, about 2 minutes.
Step 4 -Transfer the cherry mixture from the stovetop to a wire rack.
Step 5 -Add the red food coloring to the cherry mixture and stir to combine.
Step 6 -Let the cherry mixture cool to room temperature.
Step 7 -In a medium bowl, add the mascarpone cheese, the confectioners' sugar, and the brandy and whisk to combine.
Step 8 -Place 20 of the wafers on the prepared baking sheet, spacing them out evenly.
Step 9 -Evenly spread about 1 teaspoon of the mascarpone mixture on top of each of the wafers on the baking sheet.
Step 10 -Add 2 teaspoons of the cherry mixture on top of the mascarpone mixture on each of the wafers on the baking sheet.
Step 11 -Place 1 of the wafers on top of each of the cherry mixture layers on the baking sheet to create a sandwich.
Step 12 -In a small bowl, add the chocolate chips.
Step 13 -In a small saucepan over medium heat, add the heavy cream and bring just to a boil.
Step 14 -Add the warmed heavy cream to the chocolate chips and whisk until smooth.
Step 15 -Evenly drizzle the chocolate-cream mixture over each of the cookies.
Step 16 -Transfer the cookies to the refrigerator, covered, and let them chill before serving, about 4 hours.
Step 17 -Serve.
