Ingredients
- For the sandwiches:
- 1 beef rump roast or bottom round roast
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup barbeque sauce
- 12 croissants, split
- 12 slices provolone cheese
- Optional toppings:
- tomato, to taste, sliced
- lettuce leaves, to taste
- red onion, to taste
Directions
Step 1 -Rub the roast with the salt and the pepper and place it into a 5-6-quart slow cooker.
Step 2 -Cook the roast, covered, on low heat until the meat is tender, 8-10 hours.
Step 3 -Transfer the roast from the slow cooker and cool slightly.
Step 4 -Skim the fat from the cooking juices.
Step 5 -Slice the beef and return it and the strained cooking juices to the slow cooker.
Step 6 -Add the barbeque sauce to the slow cooker and heat through.
Step 7 -Preheat the broiler.
Step 8 -Place the croissant bottoms on a baking sheet and top them with the provolone cheese.
Step 9 -Broil the croissant bottoms 4-6 inches from the heat source until the cheese is melted, about 1-2 minutes.
Step 10 -Top the melted cheese slices with the barbeque beef.
Step 11 -Top the barbeque beef with the tomato, the lettuce, and the red onion.
Step 12 -Replace the croissant tops and serve.
